A new taste surprise from ETHIOPIA!

A new journey in taste begins from Ethiopia, with the Specialty Coffee Ethiopia Yirgacheffe Natural, considered to be coffee’s cradle. Our favorite drink is thought to have taken its name from the Qahva area at the SouthWest of Ethiopia.

The legend of Coffee

According to legend this is where Arabica coffee grew as a bush. The goatherd Kaldi noticed his goats eating the seeds of this bush and become more energetic. He was excited when he tried them and took them to local monastery. The monks did not accept his offering and threw the fruit in the fire. From there a seductive scent emerged. The roasted beans were taken from the ashes, were blended and diluted in a cup of water. This is how the first cup of coffee was made!

The country is famed for its varieties and quality, but the Yirgacheffe area is known for its especially strong flavored varieties.

 

Ethiopia

Apart from the country of coffee, Ethiopia is considered to be the cradle of humanity as this is where the earliest signs of modern man have been found!

Coffee production in the country is a long living tradition. This is where Coffea Arabica originates and now is farmed in areas around the world. Coffee is important to the country’s finances as it accounts for 60% of its trade wealth.

Today, Ethiopia is the largest coffee producer in Africa and the fifth in the world. There we meet the largest genetic variety of coffee in relation to any other country. Every area of the country produces coffees with different flavor, and all are well known for their high quality. The varieties from Yirgacheffe are considered to be the best and most complicated in flavor.

 

Let’s get to know Ethiopian Yirgacheffe

The specialty coffee Ethiopia Yirgacheffe is farmed in an altitude of 2000 meters. It is known as the “garden coffee” as it is farmed in very small lots, small yards of houses along with other produce. The specific variety is grown in the shade of other trees and without the use of chemicals.

It is a product of the MicroFarm Project and comes to us exclusively as a limited edition! The Ethiopian Yirgacheffe is good as filter coffee or espresso with its aromas released equally well with both production methods.

Flavor

An aroma of fresh strawberry, apricot and milk chocolate. High sweetness with strawberry and melon marmalade tones. Complex fruity acidity and rich silky body with along chocolate aftertaste of chocolate mint and caramelized fruit.

Harvest

To begin the harvest, the fruit must reach the correct level of maturity. The harvest of the cherries from the tree is always done by hand so that the mature fruit can be collected. The next step is taking the seeds to the process station where the final picking is done and the processing begins.

 

Natural processing

The coffee is processed with the Natural Processing method, which starts with picking the fruit by hand and their shaking it in special sifters until only the correct fruit are left. A stage of drying begins where the fruit is laid on special elevated drying beds. At this stage we can observe the natural process of osmosis in which the fruit shrinks and loses its moisture while the bean is enriched by all the sugars and aromatic substances that are in the flesh. These give the coffee a fresh taste with complicated fruit flavors.

The coffee that originates here produces one of the most powerful flavor profiles anywhere in the world. The flower and citrus flavors are the most important and make it stand out from the varieties growing in other areas.

 

Heirloom Variety

These varieties remind us of the Typica variety although there is no specific way to discern their origin. At this time there are more than 100 different varieties in the Ethiopian forests. These varieties are responsible for some of the most sought after flavor profiles in the world, filled with flower, citrus, cocoa and red fruit flavors.

 

Girls Gotta Run

By acquiring Yirgacheffe Natural we are helping the non-profit organization, Girls Gotta Run Foundation.

This year we have decided that part of the price for this specific variety will be given as a donation to the foundation so that we can assist with its effort to help girls in Ethiopia. This organization exists since 2006 and gives sports scholarships to high school girls so that they can finish their education and excel in their athletic performance. From 2006 until today, 50 girls with the help of this organization have managed to complete their education and challenge some of the social and cultural norms in Ethiopia.
