From Ethiopia with a lot of taste!

In Ethiopia it is cold…! After the success and depletion of the Rwabda Gashonga Bourbon, we coniine with another Specialty Coffee, Ethiopia Yukro from the Gera area, west of Ethiopia.

The particular coffee can be consumed in any way you prefer, either at our coffee roasters or making it as a filter coffee at home (with a V60, Chemex etc) or as an espresso. Yunko has been specially made to be appropriate for cold drinks such as Espresso Freddo or Freddo Cappuccino!

Let’s get to know Yukro better

The specialty Coffee Ethiopia Yukro has taken its name from the farming cooperative and processing station Yukro. The processing station is in the Gera area of the Jimma region west of Ethiopia. Its members 433 in all farm in the general vicinity that are situated at an altitude of 1900-2200 meters.

Intense sweet fruit aroma, flowery and spicy, high acidity and sweetness, rich silky body with a long refreshing aftertaste with a hint of mint.

Ethiopia

Ethiopia is the largest coffee producer in Africa and the 3rd largest producer in the world with an annual yield of 4-5 million sacks. Ethiopia produces a large range of coffees and the grains of every area have their own distinguishing traits that separate them from each other, resulting in making their coffee the best and most known all over the world.

 

Yunko processing station

This particular coffee is subjected to wet treatment and sun drying. Over 400 members of the cooperative hand pick the fruit. As soon as they are gathered they are taken to the peeling machines, where cylinders separate the bean from the pulp and are submerged in the fermentation tank.

In the tank the beans are soaked for one night. This process gives the coffee its characteristic acidity and a clearer, fresher taste. At the end of this process, the beans are washed in running river water canals before they are led to African drying beds where the process is slowly completed anywhere between 8 and 10 days. When the drying period of the beans is over the beans are carefully hand selected and transported at the dry processing station of Addis Ababa.
